With summer just around the corner, our urge to eat salads and refreshing fruit for packed-lunch is growing.
Beat the heat and cut the carbs with our traditional Bruschetta recipe – with our own summer twist!
The commonly mispronounced dish – it’s brus-k-etta people- is popular because not only it’s refreshing (and tasty) but it takes 15 minutes, perfect for #bosswomen on the go.
A large handful of tomatoes
1 garlic clove
1 red pepper
2 ciabatta rolls or slices of thick bread
A pinch of salt & pepper
Chillies/ Chilli flakes
You may have noticed that the ingredients list is quite vague in terms of quantities… That’s because traditionally bruschetta was a dish you’d make from leftover scraps in the fridge to use them up! So chuck in as many tomatoes or as much basil you like, to YOUR taste buds. Really have fun with this dish and make it your own. The same goes for dressing, I like to use a generous amount of olive oil, balsamic and salt but you may not. So start with a drizzle, test it and add accordingly.
Dice the garlic, onions, pepper and tomatoes and put them in a bowl. Your mixture should look 70% tomatoes.
Dress your tomato mix with balsamic vinegar, olive oil, salt, pepper and freshly cut basil and chillies (or chillie flakes). Season to taste.
Stir and let the mixture soak in the dressing to absorb the flavour for around 5 minutes.
Now for the summer twist. Bruschetta usually consists of toasted bread brushed with garlic. But on especially hot days, it’s nice to make heat-free dishes- no sweat, no makeup mishaps, just pure refreshment and flavour.
So slice your fresh ciabatta roll or loaf of bread so that it has a flat surface for your tomato mix.
Using a spoon, carefully add the mix to your bread.
Drizzle any remaining dressing from the bowl on top of your bruschetta and garnish with a fresh basil leaf.
